BLT coleslaw with avocado

Who doesnt love BACON….. and avocado…. and Slaw?!?!?! How does a BLT coleslaw with avocado sound? Its plain dreamy if you ask me ! Its the perfect side dish for summer ( of course anytime, but summer- perfect!)

As with most of the recipes here , you can doctor … or add or omit items as you wish and its still amazing . I love versatile cooking, when you can change a little here or there and have a whole new dish 🙂

I will share the
” Approximate ” recipe , because we all know you cant measure BACON! And everyone likes things a little different than the next person so with that said , here we go.

BLT coleslaw with avocado

  • 1 small red onion ( use as much or as little as you like ) I like to slice it in rings and then halves or fourths , some like to dice it up.
  • 5-8 pieces of bacon ( Of course I like it heavy HAHA ) Also ive used real or, I have used the microwave oscar meyer brand and it works fine. Youll want to cook it on the cripy side so it hold up in the slaw.
  • I slice up Radish to taste ,( about 3/4 cup give or take) cut it how you wish. I like it on the thicker side but I love a radish !
  • Cucumber, I use about half of a large Cuc, and I chop it . I also let it drain a bit before adding it.
  • Tomatoes – this is tricky, You could half up about 3/4 cup of cherry tomatoes , unless you are picky ( Like me , with tomatoes ) and I use Roma tomatoes and dice them, because its a texture thing for me.
  • 14 oz bag of coleslaw mix, ot you can shred your own up to you. I like to get the slaw mix with the carrots and green and red cabbage.
  • TOSS TOGETHER THE : onion,tomato, radish, Cucumber and slaw mix,(DONT ADD BACON TIL LAST AT THE END ) then next…. in seperate bowl/dish
  • PUREE OR BLEND THE NEXT ITEMS TOGETHER
  • Chives – chopped up. I use about 2-4 “stalks” or until it looks evenly spread in the mix
  • Parsley To taste and look ( You can omit )
  • 1 avocado
  • 3/4 buttermilk ( or more /less)

Combine the Puree/blend with the slaw mix and toss well until mixed . Then add the BACON in and gently toss some more 🙂 MMMMMMM Yum!

Chill in the Fridge for about 30 min prior to serving , and it holds up pretty nicely. I hope you enjoy ! Let me know what your variations on this are!
